Cucumber Slices with Avocado

YIELD: About 62 g. weight or about ½ C. cucumber slices and ½ medium sized avocado—about 101 g. or 3 ½ oz.. Serves 1 Per portion:

INGREDIENTS:

  • One Medium-sized cucumber
  • One medium sized avocado

PREPARATION:

1. Rinse a medium sized cucumber and a medium sized avocado well.
2. Cut stem end off from cucumber
3. Slice cucumber into halves.
4. Using the tip of a teaspoon, scrape the seeds out of each cucumber half.
5. Slice each cucumber half in half again, lengthwise.
6. Slice avocado in half lengthwise
7. Remove loose half, retaining seed in remaining half to preserve freshness. Place remaining half in a zip-lock bag and refrigerate until desired.
8. Scrape avocado meat from the shell starting from the bottom of the half with a spoon.
